Braised Barley with Grilled Foustani’s Sausage with Leek

Ingredients for 4 people:

  • 1 package Foustanis Sausage with Leek
  • 1200 gr. hot water
  • 200 gr. chopped onion
  • 300 gr. barley
  • 100 gr. White wine
  • 250 gr. grated tomato
  • 100 gr. grated kefalotyri
  • Fresh basil
  • Salt and pepper


  1. Cut the sausages into large pieces. Heat the broth and keep it warm while cooking. Preheat the oven to 200 ° C.
  2. We will use a large pan or a shallow pot to cook. Cut the sausages into large pieces. Put the sausages and the onion in the utensil we use, salt and leave on a medium heat, until the onion becomes transparent and sweet. Add the barley and let it take on a slightly darker color.
  3. Quench with the wine and wait for it to evaporate completely. Add the tomato and the hot broth. Close with the lid, transfer to the oven and bake for about 25 minutes.
  4. When the time is up, the barley should be ready. Add the parmesan, the basil and mix. Serve immediately.
